The Big Biscuit plans 2 Springfield restaurants

One restaurant is open and another is on the way for The Big Biscuit, an Overland Park, Kansas-based breakfast and lunch eatery.

Service started Tuesday at 2920 S. Glenstone Ave., in Brentwood Center South, with a grand opening celebration scheduled May 17, said Jason Paetzold, a partner in the company. A second restaurant is targeted to open by mid-July at 3620 S. Campbell Ave., in Kickapoo Corners.

“We have about a 60-day tight schedule to get that complete,” he said of the Kickapoo Corners site.

Paetzold declined to provide startup costs for either of the restaurants. A building permit on file with the city for the Kickapoo Corners restaurant lists a declared valuation of $140,000. A declared valuation is not listed on city permits for the Brentwood Center restaurant.

A Kansas City resident who’s a 1997 Southwest Baptist University graduate, Paetzold said he’s been in Springfield this week to supervise the new restaurant’s opening. He and company partners Jay Carpenter, David Offerdahl and Chad Offerdahl operate 14 other Big Biscuit locations in the greater Kansas City area.

“We’ve got a big vision and we believe it resonates in this part of the country,” he said, adding the company is still evaluating other restaurant opportunities in southwest Missouri. “So we’re excited to continue with our growth. Springfield is a dynamic community we want to be a part of.”

Two other locations are under lease in the Westport neighborhood of Kansas City and in Topeka, Kansas, with both set to open before year’s end, Paetzold said.

The newly opened, 169-seat Springfield eatery in the Brentwood Center is 3,915 square feet and open daily from 6:30 a.m.-2:30 p.m. General Manager David Terpening leads a staff of 50 employees. Lease terms with Jared Enterprises Inc. were not disclosed.

Paetzold said the Kickapoo Corners restaurant would be around 4,500 square feet, including a private dining room. Both restaurants have patios, he added.

“That’s a critical part of our site selection process, to have our guests be able to have dining experiences outside,” he said.

The majority of items on its southern-inspired menu range between $6-$9, Paetzold said, noting some of the unique offerings include cinnamon roll pancakes, sticky biscuits and a “bonut” – a biscuit that is split and dipped in French toast batter, fried and tossed in powdered sugar.

“It’s between a biscuit, funnel cake and French toast, all in one,” he said.
