Pop-up restaurant operator named head chef at The Order

Caleb Stangroom, the former co-owner of pop-up restaurant venture Element, is now head chef of The Order at Hotel Vandivort.

Hotel Vandivort General Manager Zackary Oxley said Stangroom was promoted to the head chef role a couple of weeks ago, ahead of a news release issued this morning. He joined The Order in August 2017 and was named sous chef a year later.

“He places a lot of emphasis on creativity and pushing culinary boundaries,” Oxley said, noting Element is no longer operating after less than a one-year run in the Springfield region. “He makes some very aesthetic dishes. He’s a very talented guy.”

Stangroom succeeds Travis Meeks, the former executive chef who exited a couple of months ago after less than a year in the role. Oxley declined to say why Meeks left The Order.

Stangroom’s promotion is part of a reorganization of the food and beverage offerings at Hotel Vandivort. Oxley said Dylan Rauhoff recently was promoted to food and beverage director from restaurant manager.

Rauhoff and Stangroom are leading food and beverage efforts as Phase II of Hotel Vandivort is on pace for a summer completion, Oxley said. The second building, a $9.5 million, 42,000-square-foot structure adjacent to the original hotel downtown, would have a separate kitchen under Stangroom’s leadership, he said.

“Menu changes will be coming down the pipeline here in pretty short order,” Oxley said, noting the menu would continue to rotate seasonally and that “our focus on local purveyors is going to persist throughout.”

The current menu features ingredients from Terrell Creek Farm, Circle B Ranch and Askinosie Chocolate, according to TheOrderSGF.com.
