Mighty Bagel returns through Victory Mission

The Mighty Bagel is making a comeback through its new owner, Springfield Victory Mission Inc.

Legacy Bagelry & Bakery LLC owners Kyle and Bethany Gerecke donated the once-popular food cart and its branding rights to the nonprofit in January, said Victory Mission Executive Director Jason Hynson. The husband-and-wife business partners converted the venture into the Legacy Bagelry retail presence in 2013. Legacy Bagelry currently operates inside MJ’s Market and Deli, 900 E. Battlefield Road, according to past Springfield Business Journal reporting. The Mighty Bagel’s return was first reported by Feast Magazine.

Hynson said, after being approached by nonprofits outside of Springfield, the Gereckes posted the opportunity on Instagram, leading to the connection with Victory Mission.

“We’re trying to increase our revenue through some sustainable, long-term business plans that will help fund our operations,” Hynson said.

The Mighty Bagel and accompanying food cart is now operated by Victory Mission’s Street Chef Catering business. Hynson said it’s staffed by Ivan Moses, Victory Mission's kitchen manager, and his team, as well as volunteers from the nonprofit’s drug and alcohol recovery programs. Employees soon will operate the cart on some weekdays outside of Victory Mission’s 1715 N. Boonville Ave. headquarters, as well as at events on Commercial Street.

“Every time somebody buys a sack lunch from our catering, every time we sell one of those, it feeds two people at our nightly meal,” he said, noting the catering operation also offers Legacy Bagelry products. “It’s also a win to get people quickly and efficiently into a job placement.”

Hynson said The Mighty Bagel will be represented at the C-Street Market this summer, and Victory Mission is considering setting up the food cart outside local businesses.
