After less than two years in business, the Jimmy’s Egg restaurant in north Springfield shuttered.
The 2440 N. Kansas Expressway breakfast and lunch eatery closed March 18, according to signage posted to the door. The Oklahoma City-based chain’s two other Springfield locations, at 3315 E. Battlefield Road and 3837 S. Campbell Ave., remain open.
“The north side of town, for whatever reason, didn’t seem to be a good spot for us,” said Dan Calhoun, managing partner for Jimmy’s Egg’s Springfield operations, this morning. “That was our slowest unit in town and we only had about 15 employees working for us. We placed the majority of them at our other two locations here in town.”
Calhoun said there are no plans to close the other Jimmy’s Egg restaurants in Springfield.
He deferred further questions on the north-side closure to Jimmy’s Egg President Kevin Burke, who could not be reached for comment by deadline.
The North Kansas restaurant opened in 3,500 square feet in November 2017. The restaurant marked the 60th location for Jimmy Egg’s, which serves breakfast, brunch and lunch dishes, and handles catering, according to past Springfield Business Journal reporting.
In April 2017, Burke told SBJ the company expected to invest around $500,000 to renovate the former Pizza Inn near the Kansas and Kearney Street intersection.
The property is owned by Floyd Family Investments LLC and has an appraised value of $239,600, according to Greene County assessor records.

I ate there three times. Service was the biggest issue, very slow and not very attentive.. But also was not open in the evening. And it was kind of expensive for breakfast.
